Chopped salad

Nothing beats a chopped salad for lunch. You can even make it a full meal by adding chicken, steak, or shrimp.

My two year old and I are salad fanatics and give this one two thumbs up for any quick lunch.

All salads are delicious, but there is just something 10x better about a chopped salad. Getting a bit of everything in every bite. Everything being coated in dressing evenly. It just cannot be beat. Pair with buttery Cracker to make it perfect.


WHAT YOU NEED


You can easily make this a large Salad or a small side salad. Mine was pretty big since I had to share.

I am giving the ingredients to what I used for mine. Feel free to add or subtract any veggies you like.

  • Baby spinach

  • romaine or iceberg

  • Sliced pepperoni

  • banana peppers

  • Black olives

  • green olives

  • red onion

  • cucumber

  • shredded cheese

  • Ritz crackers

  • Greek Yogurt cucumber dill ranch

  • salt and pepper



I love tomato in salad bug usually omit from a chopped one. Seems to make it too wet to me. If you have to have them I would say to use grape toma slices in half. Other than that feel free to add anything and use any dressing.

DIRECTIONS


I don’t have a fancy cutter like certain restaurants who make chopped salads. So, I use a chefs knife and my butchers block cutting board. You can use any cutting board as long as it is roomy enough to hold everything.

I slice my pepperoni and cucumber into 4 sections beforehand, and thinly slice my onion. just helps everything turn out more uniform in size.

place lettuce, spinach, cheese and veggies on chopping board and just start chopping. Make sure you scoop up from the bottom and sides and get it all chopped.


When done chopping place in a bowl, add dressing and mix. Enjoy with crackers.
