Cinnamon rolls!!

These are my Mama’s cinnamon rolls. Ooey, gooey, soft and cinnamon-y. Pair with cream cheese icing and you have an amazing breakfast, snack, or even dessert.

When it comes to cinnamon rolls, homemade is the ONLY way to go. Trust me. Once you make them, you will always be sure to have the ingredients on hand.

If you have kids, always include them when baking. It teaches math and patience without them even knowing. I always let my kids measure but they never get the full cup or tablespoon, etc.. I give them a smaller measure and make them get it equal to whatever we needed. It will definitely stick with them.

Ingredients


dough

  • 2 3/4 cups flour

  • 1/4 cup

  • 1 tsp salt

  • 2 1/4 tsp instant yeast

  • 1/2 cup milk

  • 1/4 water

  • 3 Tbs unsalted butter

  • 1 large egg


filling

  • 3 Tbs unsalted, softened butter

  • 1 Tbs cinnamon

  • 1/4 cup granulated sugar

  • 1/4 cup chopped pecans or walnuts (optional)

icing

  • 1 cup confectioners sugar

  • 1 block softened cream cheese

  • 1/2 tsp vanilla

  • 2-3 Tbs milk (more as needed)



Directions

  1. whisk flour, sugar, salt, and yeast together in large bowl- set aside

  2. Combine milk, water, and butter in heat proof bowl. Microwave until butter is melted and the mixture is warm to the touch, start at 1 minute and then by 30 seconds as needed. Put wet mixture into the dry ingredients, add egg, mix until dough is formed.

  3. On lightly floured surface, about 1/4 cup, knead dough for about 3 minutes. Place in greased bowl (put oil on a paper towel and wipe around bowl, you do not want standing oil) cover loosely with a kitchen towel. Rest 10 minutes, you do not want a vent or cool air near the bowl.

  4. After 10 minutes roll dough 14x8 rectangle. Spread butter over, getting to all edges. Sprinkle cinnamon sugar mixture over the butter. Roll lengthwise, and tightly. Cut into 10-12 rolls and arrange in a greased 9x13 baking dish. If you have extra just put the leftovers in another greased pan.

  5. loosely cover with plastic wrap and let rise again in warm, draft free area. 60-90 minutes

  6. bake at 375 for 25-28 minutes

  7. mix icing, pour over rolls when fresh out of the oven.

  8. enjoy immediately. Place leftovers in airtight container and refrigerate. Warm 15-25 seconds in the microwave to heat through.
