Coffee Cake Minis

Coffee cake is one of the tastiest baked goodies on the planet. Super moist cinnamon-y cake with an even yummier butter-y crumble-y streusel topping (my favorite part honestly, if i can streusel it, I am.)
I make them as often as I can in many different flavors. In the fall is when my heart needs one the most. I love to do apple, pumpkin, or sweet potato... ohhhhh so good, and it is definitely good for the soul too. This one is just a basic cinnamon one that I make when i really, really need one.
My kids love just about all sugar filled baked goods, but when I tell them I am making these they explode with excitement. Probably because I consider it a breakfast food..it is called coffee cake after all.
You do not want to over bake these, so keep a close eye on them. I usually pull mine out when there is just the slightest bit of cake coming out on the toothpick, or skewer when checking doneness.
You can go a step further with the goodness and make a drizzle for when they are done if you like. It is 2 Tbs of milk to a 1 cup of powdered sugar. Adding more of either if you need to get the right consistency.
Ingredients
1 1/2 cups all purpose flour
1/2 cup brown sugar
2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp baking soda
1/4 tsp salt
3/4 cup milk
1 1/2 tsp vanilla
1/3 vegetable oil
2 eggs
Streusel Topping
1/3 cup white sugar
1/3 cup brown sugar
1 tsp cinnamon
1/4 tsp salt
1/2 cup (1 stick) butter, melted
1 cup - 1 1/4 cup all purpose flour (ad the extra 1/4 if it isn't crumbly enough.)
Directions
Preheat oven to 375 degrees
grease muffin tins with cooking spray
For topping. Mix sugar, brown sugar, cinnamon, salt, and flour. Add butter and stir to combine. It will be crumbled looking and that is okay. set is aside.
Whisk together all dry ingredients, whisk all wet ingredients and then add wet to dry and combine.
Fill muffin tins 3/4 way full and top each one with streusel topping. Use it all up.
Bake 15-18 minutes
Let cool 10 minutes before removing from muffin tins.
