Deconstructed Popper Chicken

This is a version of my favorite go to summer grilling dish.
ingredients
• 2 halved chicken breast
• 4 jalapeño peppers
• 1 block softened cream cheese
• 1 1/2 cups shredded cheese. Colby jack or cheddar
• 8 strips bacon (I used precooked this time because I had it.)
• approx 2 Tbs Season salt
• 1 tsp garlic salt
• 1 tsp onion powder
• 1 tsp cracked black pepper

Directions
preheat oven to 375
1. * this step is optional, but adds SO much flavor*
in a skillet, I prefer cast iron sear chicken that has been seasoned with season salt and black pepper. dear each side about 3 minutes until a nice color happens.


2. In a bowl mix together cream cheese, garlic salt, onion powder and black pepper until combined. 3. Slice jalapeños in half lengthwise, and then lengthwise again. Giving you 4 strips.
*If not searing chicken place in a baking dish. if using cast iron bake it in that.*

4. smear cream cheese mixture over each chicken breast. Too cream cheese with jalapeño slices, as many/ little as you want. place bacon over jalapeño and then coat each chicken breast with shredded cheese. 5. Place in oven and cook for 30-35 minutes.
you can serve with bbq sauce, honest mustard or ranch on the side for an extra delicious bite.
