Fried eggplant

One of my all time favorite things to eat. My mama used to make fried eggplant every summer we had a garden. Eggplant is super

versatile, but I enjoy it on its own so much. crunchy on the outside and soft on the inside. you can’t beat it as a summertime side.

RECIPE



Ingredients

  • 1 medium sized eggplant (5-8 1/2 slices)

  • 1 cup corn meal mix

  • 1 cup vegetable oil

  • 2 eggs

  • 1/4 cup water

  • salt and pepper

Instructions

  • Heat oil to medium heat

  • slice your eggplant in to quarter inch slices. I like the halve mine, keeps the center from getting soggy after frying.

  • in a bowl or shallow dish add cornmeal mix and a 1/2 tsp of salt and pepper.

  • in another shallow dish add the eggs and Water. 1/4 tsp salt and pepper. whisk to combine.

  • Dredge eggplant in cornmeal mix lightly, then into egg, then into cornmeal mix again. Making sure you coat both side.

  • place in oil and cook until golden brown. There should be hardly any bubbles coming from the eggplant.

  • place on paper towel to dry.

  • sprinkle with additional salt if desired
