Fried eggplant

One of my all time favorite things to eat. My mama used to make fried eggplant every summer we had a garden. Eggplant is super
versatile, but I enjoy it on its own so much.
crunchy on the outside and soft on the inside. you can’t beat it as a summertime side.
RECIPE
Ingredients
1 medium sized eggplant (5-8 1/2 slices)
1 cup corn meal mix
1 cup vegetable oil
2 eggs
1/4 cup water
salt and pepper

Instructions
Heat oil to medium heat
slice your eggplant in to quarter inch slices. I like the halve mine, keeps the center from getting soggy after frying.
in a bowl or shallow dish add cornmeal mix and a 1/2 tsp of salt and pepper.
in another shallow dish add the eggs and Water. 1/4 tsp salt and pepper. whisk to combine.
Dredge eggplant in cornmeal mix lightly, then into egg, then into cornmeal mix again. Making sure you coat both side.
place in oil and cook until golden brown. There should be hardly any bubbles coming from the eggplant.
place on paper towel to dry.
sprinkle with additional salt if desired
