This is one of the most flavorful ways I have ever prepared chicken. My kids went on and on about it. They asked if this could be the chicken we eat every single time.

My husband said it was amazing and probably his favorite thing i have ever made.

Just a few simple ingredients and at least 30 minutes to marinate and this can be a delicious dish at your next meal.

You can cook the breast and slice like i did in the picture or cut into little chunks and cook on a skewer. If you cube, do not marinate more than an hour. No more than three hours for the breast not cubed.

Acid in the marinade will begin to cook the chicken after a while and it takes on a very odd, mealy texture.

What You Need

1 lb chicken breast, about 2. breast, halved.

2 Tbs oregano

1/3 cup plain greek yogurt

2 Tbs lemon juice

1 tsp salt

1 tsp black pepper

1/4 cup olive oil

cooking spray

How To

Spray a grill pan or iron skillet if cooking indoors and heat to medium. If grilling heat to 350-375

in a mixing bowl combine all ingredients, except chicken, and mix to combine.

taste for seasonings, i had to add more salt to my marinade and my chicken after it was cooked. that is just my preference though. you do you!

Add the halved breast or chunks and cover with plastic wrap. make sure the werap is making contact with the marinade and chicken so a skin doesn't form. place in fridge at least 30 minutes, no more than 3 hours.

I used a grill pan and seared each side really well for the grill marks about 3 minutes a side and then popped into a 450 degree oven for 5-6 minutes a side.

if grilling do about 6-8 minutes a side.

Enjoy with a side of rice and a green or greek salad. Also delicious to slice lemons in half and grill and squeeze over chicken before eating.
