You do not have to be on keto to enjoy these delicious recipes. I have not done keto in years but i still opt for eating this way every once in a while. A little healthy munching never hurt anyone.
These recipes are perfect if you are the only person dieting in your house, but still have to feed others. These recipes are crowd pleasers. So, no more trying to eat lettuce while your family eat burgers and fries.
It will help you stay on track if the whole family joins in!!

Peanut Butter Chocolate Smoothie

Now, i am not big on either chocolate or peanut butter. However, I know it is one of the most popular flavor combinations so I may as well include it in the post.
Do not use regular peanut butter, always when doing keto use all natural. It is higher in fiber and has less sugars.
Crunchy or smooth, your call.
Nutritional: makes 3 servings. 1 cup per serving. 435 calories, 41 g fat, 9g protein,
10g total carbs, 6g net carbs, 4g fiber, 3g sugar.
Ingredients
1/4 cup natural peanut butter
3 Tbs cocoa powder
1 cup heavy cream
1 1/2 cups almond milk
up to 6 Tbs your choice sweetener (stevia, splenda, swerve, etc...)
dairy free sub coconut cream for heavy cream.
Directions
Add all ingredients to blender and blend until smooth. You can add melted peanut butter drizzle and shaved dark chocolate for garnish if you like.
Chicken Bacon Ranch Casserole

I am a sucker for a casserole. They are so comforting and so easy to throw together. Easy clean up is not too bad either.
All of the casseroles on this post I still make for my family even though I am no longer doing keto. When something is good, it's good.
A few ingredients and less than half an hour to a warm and delicious dinner.
Ingredients
2 lb chicken breast, cubed
8 slices bacon, crisp
1 pack dry ranch dressing
4 cup veggies ( broccoli/cauliflower or mix.)
2 cups cheddar cheese, shredded and divided
3 cloves minced garlic
1 Tbs salt
1 Tbs black pepper
Directions
Preheat oven to 375 degrees fahrenheit
steam broccoli 1-2 minutes, if frozen just thaw and make sure all excess water is removed. Make sure broccoli is in bite size florets and pieces. *to steam just place in a microwave bowl with 1/4 cup water. drain water when done.
combine all ingredients, minus one cup of cheese, and put in 9x13 casserole.
place remaining cheese over the top and back for 20-25 minutes.

serves 8. 1 cup per serving. 469 calories, 31g fat, 38g protein, 7g total carbs, 5g net carbs, 2g fiber, 1g sugar
Taco Casserole

This is the perfect meal when you want tacos but are not in the mood to make cheese shells, or wanting a taco salad in a tomato or avocado. It is hearty and filling and will please everyone at your table. You can sub the hamburger for ground turkey or chicken if you like.
Ingredients
10 oz frozen cauliflower rice
2-3 Tbs oil, your preference
2 lbs ground beef (turkey or chicken)
1 red bell pepper, diced
1 white onion, diced
4-6 Tbs taco seasoning ( see home made seasoning on past post.)
1/4 cup water
1 Tbs tomato paste (buy it in a squeeze tube for easier storage)
3 cups shredded colby jack
toppings (all optional)
1 cup sour cream
2 cups shredded lettuce
1/4 cup black olives
1/2 cup diced tomato
1 avocado, diced
1/2 cilantro, chopped
2 jalapeno, diced
1 cup salsa
Directions
Preheat oven to 350 degrees fahrenheit
Fry rice in a skillet in oil over medium high heat until golden brown. Add 1 Tbs of taco seasoning if you like. I do for extra flavor in all the layers. Place rice in casserole dish, 9x13, in a even layer.
In same skillet brown ground meat with bell pepper and onion. When browned add remaining taco seasoning, tomato paste and 1/4 water. Cook for a couple minutes to let all the water absorb and allow the raw tomato taste to cook out of the paste. Should be about 3-5 minutes.
Place meat mixture over rice and cover with cheese.
Bake 15 minutes or until cheese is completely melted and bubbly.
Spread sour cream over then add additional toppings if desired.
Nutritional facts. Serves 8. 1 cup per serving. 40g fat, 581 calories, 10g carbs, 2g fiber, 1g sugar, 44g protein.
Jalapeno Popper Chicken

One of my all time favorite ways to prepare and eat chicken is with jalapeno and cream cheese. You just cannot go wrong with the combination. This is another recipe i make often for my family. Serve with a side of roasted green beans and you have one tasty meal.
Ready for the oven and on the table in less than an hour this makes for a great weeknight meal.
Ingredients
1 lb chicken breast, halved lengthwise
1 tsp garlic salt
1 tsp onion powder
8 oz cream cheese, softened
3 jalapenos
1/2 cup sharp cheddar
1/2 cup bacon, crisp
salt and pepper
How To
Preheat oven to 350 degrees fahrenheit
Fry bacon to crips and set aside.
Salt and pepper both sides of chicken and place in baking dish. 9x13.
you can sear chicken in a skillet beforehand if you like. I always do because i prefer the flavor and the texture after cooking in the oven if it has been seared first.
Season cream cheese with garlic salt and onion powder and then spread over the chicken.
Sprinkle over cheddar cheese.
Dice jalapeno and bacon. Sprinkle both over cheese and then place in the over.
bake for 30-35 minutes.
Nutritional facts. 1 breast per serving. 227 calories. 16g fat, carbs 1g, sugar 1g, protein 17g.
Cheese Crispies

These crispy, salty, golden little delights will make your dieting life so much better.
You can use in place of chips or just enjoys as yummy snack. I used to break them over my salads to replace croutons or eat along my salad to replace crackers. You can leave off the bacon and jalapeño if you like.
Stupid easy, and out of this world delicious. You will have a jar of these on hand at all times.
Ingredients
3 cups sharp cheddar or parmesan
1 Jalapeno thinly sliced
1/4 crumbled bacon
1 tsp paprika
1 tsp cayenne
DIRECTIONS
preheat oven to 350 degrees fahrenheit
Mix cheese with spices, place a jalapeño slice in the middle and sprinkle bacon over (you can add any spices you like. Or just do the cheese on its own. )
on a parchment lined baking sheet place a tablespoon of cheese in mounds 2 inches apart.
bake for 5-10 minutes and keep a close eye on them!
When completely flattened and melted they are down. leave on baking sheet a few minutes to firm up before removing. Allow to cool completely before eating. This gives them the chance to crisp.
Store in a gallon bag at room temperature.
Nutritional information. 4 per serving. 0.4g carbs, 0.2g sugar. 102.9 calories. 11.4g fat
Ham and Cheese Bites

My kids absolutely love when I make these. They are perfect for a quick on the run breakfast, or a yummy snack.
They are very versatile if ham is not your thing or you want to jazz them up. You can go all veggie, use sausage or bacon. I like to add jalapeno to spice them up. Any way you choose to go these will be a delicious bite.
Ingredients
2 cups ham, diced
4 oz cream cheese, softened
1/3 cup almond or coconut flour
1/2 tsp baking powder
1 1/2 cups shredded cheddar
3 eggs, beaten
Directions
preheat oven to 350 degrees fahrenheit.
combine ham and cream cheese and mix thoroughly.
Add remaining ingredients and then chill mixture in the freezer for 10 minutes.
DO NOT SKIP CHILLING
Spray a baking sheet with cooking spray. Make round golf ball sized balls and place on the sheet. Bake 20-23 minutes until golden brown.

No bake cookies

These will be your go to dessert. They are so easy to make and ready in no time. Since they are no bake it is a perfect summer dessert. No heating the kitchen! You can make these with or without the cocoa powder. I suggest making some of both! They are delicious.
You will want to use all natural peanut butter. It is higher in fiber and has less sugar.
Ingredients
2 Tbs butter
2/3 cup all natural peanut butter or nut butter
1 cup unsweetened coconut
4 drops vanilla lakanto
1 Tbs cocoa powder ( optional)
can use a granulated sweetener instead if you prefer. If you do add to the butter and melt together.
How To
Melt butter and then stir in PB until smooth.
If adding cocoa add it now, add coconut and vanilla lakanto and mix well.
Scoop 2" spoonfuls onto a baking sheet.
Freeze for 10 minutes.
Keep refrigerated and stored in an air tight container.

Cheesecake Fluff

Cheesecake is something I could never give up in this life. It is creamy, decadent, perfection.
This recipe will be something worth hanging on to. It is all the goodness of cheesecake without the guilt. Definitely going to be something you make over and over again. Super simple to make and you will most likely have all these ingredients on hand anyway.
Ingredients
8 oz cream cheese, softened
1/2 cup heavy cream, COLD
4 Tbs sour cream
1/4 cup stevia
1 1/2 tsp vanilla
1/3 cup strawberries, diced (optional)
How to
Combine cream cheese and sweetener in mixer until well combined and smooth.
Add vanilla and sour cream, mix until combined.
Scrape down the sides and add heavy cream. Mix until stiff peaks form.
Divide into glasses and add berries. Chill for at least an hour.

1 cup per serving. 322 calories, 4.8g carbs, 32g fat, 3g sugar, 5.2g protein.
BLUEBERRY SMOOTHIES!!!

Another smoothie to end the post because who doesn't love a smoothie!
They are so delicious no matter what you use to make them, however they are not always as nutritious as they claim to be. This is another to add to your recipe collection without any of the guilt to follow. You can add a different fruit if you like, just keep up with how much natural sugar they have. Also add 2 Tbs greek yogurt to make it extra creamy.
Smoothies are perfect because they can be breakfast, dessert, an extra filling snack if you have a long stretch before eating again.
Ingredients
1 cup coconut or almond milk
1/4 cup frozen blueberries
1 tsp vanilla extract
1 tsp MCT oil or coconut oil
How To
Put all ingredients into a blender and mix until smooth.
Enjoy!
