Meatless Monday!!

It doesn’t have to be a Monday, but do give one of these a try, I promise you will not be disappointed. I am not a vegetarian, but I do love to eat meatless. Honestly, once a week I encourage everyone to give up meat and then tell me you can’t go without it every meal.
You can still have hearty and fulfilling meals without a meat. Also, meatless doesn’t mean strictly veggies... although veggies are delicious and people who hate on them I will just never understand 😩 So many pasta dishes have no meat in them at all and are so delicious, you will never even miss it.
Eggplant Parmesan

This is my go to when my husband takes me out for Italian. It is crispy, cheesy, saucy goodness. No meat, no problem. It isn’t missed at all. The eggplant takes on a meaty mouth feel, making up for noodles and meat in one. My husband does not like eggplant at all, but he looooooves when I make this at home or get it when we go out. So, if you’re thinking you don’t like eggplant, I still say give it a try. I think you’ll be surprised.
Rice & Bean Burritos

Hearty and delicious! You can add anything you want to jazz them up. Pick, guacamole, jalapeño, cheese, sour cream. Be creative and enjoy!
Cacio e Pepe

This is 3 ingredients (4 if you add heavy cream, not a must)
Cheesy, black pepper coated noodles. It really doesn’t get much better. In 15 minutes you can have something delicious. Pair with big crusty garlic bread or a salad and yuuuummmm.
Eggplant ”Meat”balls

SO GOOD! Not the same as eggplant parm because the texture is like a meatball. Equally delicious.
Cauliflower Fried Rice

I absolutely love cauliflower fried rice! It gets crispy and delicious and really soaks up all the flavors you add to it. Obviously you could do just rice since it isn’t a meat, but this is just a different way to go entirely. Either way, who doesn’t love a good fried rice.
Veggie Stir Fry

Veggies are so hearty and filling. Full of fiber and goodness. Adding flavorful sauces to them can really trick your mind into thinking you aren’t eating just veggies. Make your veggies spicy with a Kung Pao sauce or sinfully sweet with a thick teriyaki. These would go great with your cauliflower fried rice! Make it a full meal.
Fettuccine Alfredo

No explanation needed. It’s just good and I think everyone knows it.
Broccoli & Cheese bakes potato

My all time favorite meatless go to is the baked potato! Pair with a green salad and you have one heard to beat meal!
Tostadas

Use black refried beans for even more flavor in these tasty meatless wonders. Add any toppings and have a whole new take on Taco Tuesday. Meatless Monday can now be two days in a row. See, you can totally do this.
Baked Mac&Cheese

Add as much cheese and heavy cream as you can! The more cheese and cheeses in macaroni, the better. Good Mac and cheese is pretty unbeatable. Bake it and get that crunchy, brown goodness of a topping to cover the ooey gooey-ness underneath. A super family friendly meatless meal.
Cheese Tortellini W/ Marinara

Cheesy pockets of goodness!
Really step up the flavor with cheese and spinach tortellini 🤤
Make your own tomato sauce to really pack a flavorful punch.
Pick one and see just how amazing meatless can be. Easier on the pocket book and usually much faster to prepare. I promise there is a meatless meal out there for everyone.
