Pan Fried Fingerling Potatoes

RECIPE


ingredients

  1. 1 pound or one bag (little net bag) of fingerlings. Multicolored is a fun twist if you can find them.

  2. 1 Tbs bacon grease or vegetable oil

  3. 1/2 white onion

  4. salt and pepper to taste

  5. 1/2 tsp paprika



Instructions

  1. place grease or oil into skillet and heat to medium

  2. Slice fingerlings into rounds. You do not want too thick, but too thin will fall apart durning cooking.

  3. thinly slice onion

  4. Add to skillet and sprinkle over seasoning

  5. leave them alone!! Let them sit at least 5 minutes to start to form a crust.

  6. After 5 minutes gently stir/flip them them. cover for 5 minutes and then stir again.

  7. cook until tender. Can take anywhere from 10 to 15 minutes. I like to remove my lid after they are done to really get a good crust on them but it isn’t not necessary, they will still brown with the lid on.

  8. Add more salt or pepper if needed
