Refreshing Cucumber Salad

As soon as it begins to warm up outside I crave fresh veggies more than anything. This cucumber salad is at my table just about every night in the summer.

It is light and tangy, and absolutely satisfying!


Mix it up and keep it in the fridge for up to 3 days as a go to side.



RECIPE

*This can be adjusted easily to make more or less. Pictured I used half a cucumber. *

  1. 1-2 medium sized cucumbers

  2. 1-2 Roma tomatoes

  3. 1/2 red onion

  4. 1/2-1 cup apple cider vinegar

  5. 1 tsp of sugar, to start.. add more to taste

  6. 1/4 tsp salt

  7. 1/4 tsp cracked black pepper


INSTRUCTIONS


Slice cucumber, tomato and onion. *I have done my cucumber in whole rounds, half rounds, and as pictured in halved, halves. you can slice them any way.. just make sure they are all close in size.*

Add cucumber, tomato, and onion to a large bowl. sprinkle in sugar, salt and pepper. Add your vinegar and mix


• You can adjust seasonings, sugar, and vinegar to your liking.
