Spinach Baked Chicken

This was a new spin on one of my favorites. I love to stuff chicken breast with a creamed-ish spinach mixture, wrap it in bacon, and bake or grill. Talk about delicious! I'll get to posting that someday.

I decided to go this way because I didn't have bacon, but i had a ton of cream cheese and spinach. So, improvise!!!!



Indredients


2 chicken breast, halved

2 cups chopped frozen spinach, thawed

3 Tbs chopped sundried tomatoes

4-6 slices provolone cheese

1/2 block cream cheese, softened

1 tsp salt and pepper each

1 Tbs garlic powder

1 tsp cayenne

1 Tbs butter

season salt an more black pepper for chicken



How To


  1. preheat oven to 425 degrees fahrenheit

  2. heat a large skillet to medium and melt butter

  3. place spinach in a dish towel and squeeze over sink to remove excess water.

  4. season chicken with season salt and black pepper. cooke each side to sear for 3-4 minutes. then place on a baking sheet

  5. in same skillet add spinach and seasonings, warm through and then add cream cheese. Cook a few more minutes until cream cheese is melted and all is combined.

  6. tear provolone cheese in half place a piece or two on each breast. Spoon a 1?4 cup of spinach mixture over cheese and spread into an even layer.

7.Bake for 15 minutes.
