This was a super quick lunch for me because I used leftover steak from a previous dinner. No leftover steak, no problem.
I love stir fry because it is a perfect way to utilize a leftover protein. Add some veggies and a little sauce..BOOM! perfect lunch or dinner. Add any mix of veggies you like. It'll be delicious.
Ingredients
1 NY strip, sliced thin
1/4 cup squash
1/4 cup broccoli
3 Tbs hoisin sauce
1 Tbs teriyaki sauce
1 Tbs soy sauce
1 Tbs sriracha
1 Tbs corn starch
salt and pepper
1 Tbs veggie oil
How to
Slice steak thinly and sprinkle with salt pepper and corn starch. mix until all coated.
Heat non stick or iron skillet, wok if you have one to medium high.
Mix all sauces.
Put meat in and cook for 2-3 minutes then remove.
add veggies and cook for 3-4 minutes. return steak. Add sauce and cook 2-3 more minutes until it thickens slightly.
Serve over white rice, fried rice, or noodles. I garnish with more sriracha.

If using leftover steak omit seasoning the steak with salt and pepper or the corn starch. Instead mix the cornstarch with 2 Tbs water and mix to combine. you will add to the stir fry when you add the sauce. Stir until thick.
You can use thin eye of round if you don't have steak lying around. It is super tender and just as delicious. It is the route I go when i do not have a steak leftover.
